For most cuts — steaks, chicken thighs, pork chops, tofu — a 10-minute cycle delivers noticeably deeper flavor than an overnight soak. Thicker roasts benefit from a 20-minute cycle. You can always run longer; the timer has 5, 10 and 20-minute presets.
